Palhete

Palhete

Inspired by the medieval wines once produced in this region when Portugal was born as a kingdom, this wine blends white and red grapes during fermentation — just as the Cistercian monks did in the 12th century. The combination of fully ripe Fernão Pires (white) and fresh Trincadeira (red) results in a beautifully balanced wine, with aromas of stone fruit and red berries. On the palate, it is full, complex, and remarkably savory.

Crafting Process

White grapes are taken to the press, from which the must is obtained. The must is then placed in the clay amphora and in the stainless steel tank afterwards. The unpressed red grapes are placed in the same tanks so that spontaneous fermentation happens with both grapes together. After this period, it is transferred to another stainless steel tank, where it stabilizes and naturally clarifies during the winter due to the cold temperatures.

Vinho Verde DOC Baião

Vinho Verde DOC
Baião

Produced in the Vinho Verde region, specifically the Baião sub-region, by Quinta de Santa Teresa. Composed by estate owned Avesso and Arinto, two autochthonous varieties in the region. The grapes are pressed after selection and ferment with controlled temperature. The blend is then defined bringing together different stainless steel vats with the goal of producing a fruit-forward and fresh wine with enough body and complexity to be enjoyed at the table. On the aroma it shows notes of white and stone fruit, slightly tropical.

Crafting Process

1. Made with Avesso and Arinto grapes, carefully selected in the selection table.
2. Grapes are destemmed and gently pressed into stainless steel vats.
3. Spontaneous fermentation then occurs at controlled low temperatures, before light filtration and bottling.

Vinho Verde Rosé DOC Baião

Vinho Verde Rosé DOC
Baião

Born in Baião, a subregion of Vinho Verde, this organic rosé is crafted by Quinta de Santa Teresa, a family-owned estate dedicated to organic winemaking. It blends Touriga Nacional — Portugal's signature rosé grape — with a touch of Vinhão, creating a wine of elegance and vibrancy. Only the first, lighter juice is used, giving a pale, dry style with refined color and balanced structure. On the nose, floral notes of lavender mix with fresh red berries; the palate is crisp and expressive, with lively acidity, red berry flavors, hints of blackcurrant, and a subtle citrus edge.

Crafting Process

1. Grapes are carefully hand-selected, destemmed, and undergo just a few hours of skin contact in the press.
2. Only the first pressing is kept, yielding delicate juice. Fermentation occurs spontaneously in stainless steel at low temperatures, followed by light filtration and bottling.
3. The vineyards grow on a mosaic of granite and slate soils, lending freshness and minerality.
